  • 300 grams semi dried tomatoes, in oil
  • 2 tablespoons olive oil
  • 1 1/4 cups raw macadamias, chopped
  • 2 teaspoons rosemary, finely chopped
  • 1-2 tablespoons of the semi dried tomato oil

How to Make

  • Step 1: Place semi dried tomatoes (reserve the marinating oil) in a small food processor along with 2 tablespoons olive oil and process until chopped but not quite smooth. Remove mix from the food processor and transfer to a bowl.

  • Step 2: Stir through the macadamias and rosemary, along with 1-2 tablespoons of the semi dried tomato oil to make a moist, pesto like consistency.

  • Step 3: Cover and set aside for an hour before serving.
