Step 5: While the potatoes are cooking, prepare the bravas sauce. Heat olive oil in a saucepan over medium heat. Add the chopped onion and cook until it becomes soft and translucent, about 5 minutes.
Step 6: Add the minced garlic, paprika, and cayenne pepper to the saucepan. Cook for an additional minute, stirring continuously to toast the spices.
Step 7: Stir in the diced tomatoes, tomato paste, and white vinegar. Bring the mixture to a simmer and let it cook for about 10-15 minutes, allowing the flavors to meld together. Season with salt to taste.
Step 8: Once the potatoes are done, transfer them to a serving dish. Drizzle the bravas sauce over the potatoes, or serve it on the side.
Step 9: Garnish the Patatas Bravas with chopped fresh parsley. You can also serve them with a side of mayonnaise or aioli for dipping.
