Step 1: Heat a non-stick skillet or griddle over medium heat.
Step 2: Butter one side of each slice of bread.
Step 3: Place four slices of bread, buttered side down, on a clean surface.
Step 4: Spread a generous amount of pulled pork or BBQ shredded chicken onto each slice of bread.
Step 5: Add any additional toppings you desire, such as sliced onions, pickles, or a drizzle of BBQ sauce.
Step 6: Sprinkle shredded cheese over the meat and toppings on each slice.
Step 7: Place the remaining four slices of bread on top, buttered side up.
Step 8: Carefully transfer the assembled sandwiches onto the heated skillet or griddle.
Step 9: Cook for about 3-4 minutes, or until the bottom bread is golden brown and crispy.
Step 10: Carefully flip the sandwiches using a spatula and cook for an additional 3-4 minutes, or until the other side is golden brown and the cheese is melted.
Step 11: Once the sandwiches are cooked to your desired level of crispness and the cheese is melted, remove them from the skillet or griddle.
Step 12: Let the sandwiches cool for a minute or two, then slice them in half or into quarters for serving.
