Ingredients

The ingredients are:
  • 2 cups granulated sugar
  • 1 1/2 cups oil (vegetable oil or extra light tasting olive oil)
  • 4 large eggs
  • 1 teaspoon vanilla
  • 2 cups all-purpose
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 teaspoon cinnamon
  • 3 cups carrots shredded (freshly shredded carrots)
  • 1/2 cup coconut, chopped fine
  • 1 cup pecans, chopped fine
  • CREAM CHEESE FROSTING
  • 8 ounces cream cheese (Philadelphia cream cheese)
  • 1/2 cup unsalted butter, softened
  • 1 pound confectioners’ sugar
  • 2 teaspoons vanilla
  • 1/2 cup pecans (pieces, optional)

How to Make

  • Step 1: Preheat oven to 350 degrees.

  • Step 2: Grease and flour two 9-inch round pans; set aside.

  • Step 3: In a large mixer bowl, combine the sugar, oil, eggs, and vanilla and mix for 2 minutes on medium speed.

  • Step 4: Add the flour, baking powder, baking soda, cinnamon and salt and mix for 1-2 minutes more.

  • Step 5: Stir in the coconut, carrots, and pecans and mix until blended. Divide the batter into the two prepared pans.

  • Step 6: Bake for 30-40 minutes or until toothpick inserted into the center of the cakes comes out clean.

  • Step 7: Remove from oven and let the cake cool in pans on wire racks for 5 minutes then remove the cakes from pans and cool completely on wire racks.

  • Step 8: Frost carrot cake with cream cheese frosting.

  • Step 9: Cream Cheese Frosting:

  • Step 10: In a mixing bowl, using an electric mixer, cream the butter and cream cheese until well blended.

  • Step 11: Add the confectioners’ sugar and vanilla. Beat until very creamy.

  • Step 12: Spread the frosting on the cake.

  • Step 13: Sprinkle pecans pieces on top of cake, if desired.
