Step 1: In a slow cooker, combine the steel-cut oats, coconut milk, water, shredded coconut, dried tropical fruits, macadamia nuts (if using), maple syrup, vanilla extract, ground cinnamon, and a pinch of salt. Stir well to combine.
Step 2: Cover the slow cooker and set it to low heat. Cook the oatmeal for 8 hours overnight.
Step 3: In the morning, give the oatmeal a good stir. If the consistency is too thick for your liking, you can add a bit more coconut milk or water to reach your desired consistency.
Step 4: Serve hot, in bowls. Top with sliced banana, additional shredded coconut, chopped fresh tropical fruits, and chopped macadamia nuts, if desired.
