Step 1: Put bok choy, Napa cabbage, garlic, ginger root, mushrooms, scallions, water chestnuts, bamboo shoots, red bell pepper, pepper flakes and vegetable stock into a large soup pot.
Step 2: Stir to combine.
Step 3: Cover and bring to a boil over high heat.
Step 4: Reduce heat to low and simmer, partially covered for approximately 10 minutes.
Step 5: Add bean sprouts, soy sauce and snow peas.
Step 6: Cook for an additional 4 minutes.
Step 7: Stir in cilantro and parsley.
