  • 1 tablespoon fresh chives, minced
  • 2 ounces creme fraiche
  • 1/4 teaspoon lemon zest

How to Make

  • Step 1: Mix herbs and zest into creme fraiche saving a bit of herbs for eggs.

  • Step 2: Heat butter.

  • Step 3: Beat egg mixture including some herbs and pour into pan.

  • Step 5: On one side put the salmon, dollop creme fraiche mixture on top.

  • Step 6: Fold over to cover and to heat filling.
