Step 1: Heat the butter and oil in a medium skillet over medium-high heat.
Step 2: Add the onion and bell pepper, cook until tender, 5 minutes.
Step 3: Add the dry salami and banana peppers and heat through.
Step 4: Transfer to a small bowl and set aside.
Step 5: Meanwhile, in a small mixing bowl, crack the eggs and beat with the milk, season to taste.
Step 6: Transfer beaten egg mixture to the skillet.
Step 7: Gently push cooked portions of egg from edges toward the center with inverted turner so that uncooked eggs can reach the hot pan surface.
Step 8: Continue cooking, tilting pan and gently moving cooked portions as needed.
Step 9: When top surface of eggs is thickened and no visible liquid egg remains, place sausage, onion, and peppers filling on one side of the omelet.
Step 10: Place grated cheese on top of filling and fold omelet in half with turner.
Step 11: Cover and cook until cheese melts
