Ingredients

The ingredients are:
  • 2 tablespoons olive oil
  • 2 garlic cloves, smashed
  • 15 ounces butter beans, drained (1 can)
  • 1/2 cup frozen kale
  • 1 tablespoon lemon juice
  • 1 teaspoon lemon zest
  • 1/4 teaspoon sea salt flakes
  • 1/4 teaspoon black pepper
  • 3 tablespoons milk
  • Sausage
  • 1 tablespoon olive oil
  • 1/2 pound ground pork sausage
  • 1/2 tsp fennel seeds
  • 1/4 teaspoon poultry seasoning

How to Make

  • Step 1: In a small frying pan, heat oil and garlic on a medium heat for four to five minutes, until tender.

  • Step 2: Drain off most of the bean juice from the can, leaving just a few splashes, behind, then tip the beans and the remaining can juices into the pan.

  • Step 3: Stir in the kale, lemon juice and zest, and a pinch of salt, and simmer for three minutes to wilt the greens.

  • Step 4: Mash the bean mixture with the milk.

  • Step 5: Heat another skillet with oil.

  • Step 6: Add sausage, poultry seasoning and fennel seeds cook until brown.

  • Step 7: Drain and put over mashed beans.

  • Step 8: Season to taste.
