  • 1 cup onion, sliced
  • 2/8 teaspoon salt
  • 2 tablespoons oil
  • 1/4 cup peanuts, chopped
  • Broccoli
  • 6 cups small broccoli florets
  • 1/2 teaspoon salt
  • 2 cups water, boiling
  • Dressing
  • 1/8 teaspoon salt
  • 2 tablespoons peanut butter
  • 3 tablespoons lemon juice
  • 1 teaspoon honey
  • 2 tablespoons olive oil
  • 2 tablespoons water, boiling
  • 2 cups apples, cut into thin slices, peeled

How to Make

  • Onion

  • Step 1: Sauté with olive oil and a generous pinch of salt over medium heat for about 15 minutes, stirring frequently.

  • Step 2: Add nuts the last couple of minutes.

  • Step 3: Once caramelized, move onion mixture to a paper towel to crisp up a bit.

  • Step 4: Meanwhile, get water boiling for the broccoli.

  • Step 5: Steam until it reaches your preferred consistency, at least 5 minutes with a sprinkle of salt, dry it in a salad spinner.

  • Step 6: Whisk together the salt, peanut butter, lemon juice, honey, oil and water.

  • Step 7: Pour dressing over broccoli and apples, top with caramelized onions and nuts.
