Step 3: Cover the crockpot and cook on low heat for 8-10 hours or on high heat for 5-6 hours, until the pork is tender and easily falls apart.
Step 4: Once cooked, remove the pork from the crockpot and transfer it to a cutting board. Shred the meat using two forks, discarding any excess fat.
Step 5: Heat a skillet over medium heat. Add the canned whole green peppers to the skillet and cook for a few minutes on each side until they are heated through.
Step 6: Place a slice of pepper jack cheese on top of each whole green pepper in the skillet and let it melt.
Step 7: To assemble the pulled pork sandwiches, spread a generous amount of the BBQ sauce on the bottom half of each hamburger bun.
Step 8: Place a portion of the pulled pork on top of the BBQ sauce.
Step 9: Take a green pepper with melted cheese from the skillet and place it on top of the pulled pork.
Step 10: Add shredded lettuce and sliced jarred jalapenos on top of the green pepper.
Step 11: Drizzle with additional BBQ sauce.
Step 12: Cover the sandwich with the top half of the bun.
