Step 1: Chop peppers in very thin julienne strips, then dice as thin as possible, The smaller the cubes, the better.
Step 2: Chop the tomatoes, remove the seeds and any juice. Dice the tomatoes as small as possible.
Step 3: Dice the onion.
Step 4: Add pepper, tomatoes, onion in a bowl. Pour red wine vinegar and olive oil over the veggies.
Step 5: Add salt and oregano.
Step 6: Mix everything well.
Step 7: Cover bowl with plastic wrap and refrigerate 1 hour.
