Ingredients

The ingredients are:
  • 2 tablespoons olive oil
  • 2 cups carrots, chopped
  • 2 cups celery, chopped
  • 2 cups onions, diced
  • 6 cloves garlic, smashed
  • 1/2 teaspoon salt, to taste
  • 1/2 teaspoon cinnamon ( they had 2 tablespoons)
  • 1/2 teaspoon cumin ( they had 2 tablespoons)
  • 7 ounces brown lentils (rinsed, sorted), (1 cup)
  • 8 ounces mushrooms, sliced
  • 1/4 teaspoon pepper
  • 6 cups vegetable broth
  • 1 bay leaf
  • 6 cups fresh baby spinach
  • 1 lemon, juiced

How to Make

  • Step 1: Spray crockpot with cooking spray.

  • Step 2: Heat oil in stock pot.

  • Step 3: Add carrots, celery, mushrooms, onions and garlic and cook for 3 minutes or until they start to turn transparent.

  • Step 4: Add salt and pepper to taste.

  • Step 5: Add cinnamon and cumin directly to the vegetables and stir.

  • Step 6: Cook for an additional 2 minutes to bring out spices.

  • Step 7: Add lentils and saute an additional 2 minutes.

  • Step 8: Put in crockpot.

  • Step 9: Add broth and bay leaf.

  • Step 10: Turn crockpot on low for 2 hours.

  • Step 11: Add water if needed.

  • Step 12: Make sure lentils are cooked through.

  • Step 13: Remove bay leaf.

  • Step 14: Just before serving, add spinach and lemon juice.

  • Step 15: Stir and let spinach wilt.
