Step 1: Spray crockpot with cooking spray.
Step 2: Heat oil in stock pot.
Step 3: Add carrots, celery, mushrooms, onions and garlic and cook for 3 minutes or until they start to turn transparent.
Step 4: Add salt and pepper to taste.
Step 5: Add cinnamon and cumin directly to the vegetables and stir.
Step 6: Cook for an additional 2 minutes to bring out spices.
Step 7: Add lentils and saute an additional 2 minutes.
Step 8: Put in crockpot.
Step 9: Add broth and bay leaf.
Step 10: Turn crockpot on low for 2 hours.
Step 11: Add water if needed.
Step 12: Make sure lentils are cooked through.
Step 13: Remove bay leaf.
Step 14: Just before serving, add spinach and lemon juice.
Step 15: Stir and let spinach wilt.
