Ingredients

The ingredients are:
  • 1 1/2 kilogram king prawns, small uncooked
  • 500 grams linguine
  • 1/4 cup olive oil (60ml)
  • 3 cloves garlic, sliced thinly
  • 2 chillies, fresh long red and sliced thinly
  • 1/3 cup parsley, coarsely chopped
  • 50 grams baby spinach, or baby rocket leaves

How to Make

  • Step 1: Shell and devein prawns, leaving tails intact (I prefer tails off).

  • Step 2: Cook pasta in large saucepan of boiling water, according to packet instructions, until just tender.

  • Step 3: Meanwhile, heat half the oil in large frying pan and cook prawns, in batches, until they just change colour and then remove from pan and cover to keep warm.

  • Step 4: Heat remaining oil in same frying pan and cook garlic and chilli, stirring, until fragrant.

  • Step 5: Reserve 1/2 cup of pasta cooking liquid then drain pasta and return pasta to pan with prawns, reserved cooking liquid, chilli mixture, parsley and baby spinach or rocket and toss to combine and serve immediately.
