Ingredients

  • 1 tablespoon olive oil
  • 2 tablespoons Sofrito
  • 1/2 cup onions, chopped
  • 1/2 pound potatoes peeled, chopped
  • 1 bay leaf
  • 1 teaspoon adobo
  • 1 teaspoon dried oregano
  • 1/4 ounces Sazon with achiote (1 packet)
  • 2 tablespoons ketchup
  • 1/4 teaspoon pepper ,to taste
  • 1/4 cup cilantro, minced
  • 15 ounces kidney beans (1 can)
  • 15 ounces cannelloni beans (1 can)
  • 3 cups chicken broth

How to Make

  • Step 1: In medium saucepan over medium high heat add oil and warm.

  • Step 2: Add in Sofrito and seasonings, cook for a minute.

  • Step 3: Add remaining ingredients.

  • Step 4: Bring to a boil and lower heat to medium, cook until potatoes are fork tender, then serve over rice.
