Step 1: Preheat oven to 375
Step 2: Pat chicken dry and put in a medium bowl, add garlic, pepper, salt and half of the lemon juice
Step 3: Finely chop cilantro and add half to the bowl
Step 4: Add 2 tablespoons olive oil
Step 5: Turn the chicken until well coated
Step 6: Place on baking sheet or tin
Step 7: Bake turning once until cooked about 25 minutes
Step 8: Halve the grape tomatoes
Step 9: Add to a salad bowl, small dice avocado and add to bowl
Step 10: Small dice medium onion add to bowl.
Step 11: Add the other half of cilantro
Step 12: Add salt and pepper and lemon juice and mix all
Step 13: Dice chicken thighs and add.
Step 14: Serve
