Step 2: Beat butter and yolks until foamy
Step 3: Add flour and grated cheese
Step 4: Beat egg white until very stiff
Step 5: Gently fold egg whites into the butter mixture
Step 6: Cover a baking tray with nonstick parchment paper, and spread the batter about 2 cm thick
Step 7: Bake for 20 minutes
Step 8: Cut into diamonds and immediately serve in the hot broth
