Ingredients

The ingredients are:
  • 2 tablespoon olive oil
  • 1 cup red onion, diced
  • 1 pound ground beef
  • 14 ounces dry basmati rice, (2 cups)
  • 3 cups water, boiling
  • 1 1/2 cups frozen peas and carrots
  • Spices
  • 1 bay leaf
  • 4 cardamom pods
  • 1 cinnamon stick
  • 1/2 teaspoon seven spice mix
  • 1/2 teaspoon ground white pepper
  • 1/2 teaspoon garlic salt
  • 1/8 teaspoon pepper ,to taste
  • 1 tablespoon lime juice
  • 1 teaspoon lime zest
  • Topping
  • 1 tablespoon ghee
  • 1 tablespoon pine nuts
  • 2 tablespoons flaked almonds

How to Make

  • Step 1: Have all spices ready.

  • Step 2: Heat oil in large stock pot.

  • Step 3: Cook onions until translucent.

  • Step 4: Add beef and spices to taste, they add more but you may need just a dash.

  • Step 5: Cook until brown.

  • Step 6: Add rice and stir 2 minutes.

  • Step 7: Add frozen vegetables, water, juice and lime zest.

  • Step 8: Boil 5 minutes.

  • Step 9: Cover and simmer 20 minutes.

  • Step 10: Take off heat.

  • Step 11: In skillet fry nuts in ghee until light toasted.

  • Step 12: Pour over the top of the rice and cover.

  • Step 13: Let set 5 more minutes.
