  • 1 cup onion, chopped
  • 1 clove garlic, smashed
  • 4 ounces dry orzo pasta,(1/2 cup)
  • 1/4 teaspoon turmeric powder
  • 6 cups water
  • 1 teaspoon dried parsley
  • 1 bay leaf
  • 1 can (15 ounces kidney beans, drained
  • 1/2 pound potatoes peeled, diced
  • 1 cup frozen peas and carrots, thawed
  • 1 zucchini, diced
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper

How to Make

  • Step 1: Heat oil and butter in a large pot.

  • Step 2: Saute onions until caramelized.

  • Step 3: Add orzo cook until toasted.

  • Step 5: Add water bay leaf and parsley.

  • Step 6: Add beans and potatoes.

  • Step 7: Simmer 20 minutes adding peas and carrots with zucchini last 10 minutes.

  • Step 8: Season to taste.

  • Step 9: Take out bay leaf.
