  • 20 ounces (2 boxes 10 ounces each) frozen spinach, chopped,
  • 1 cup flour
  • 1 teaspoon salt
  • 1/8 teaspoon garlic powder
  • 1 teaspoon baking powder
  • 2 eggs
  • 1 cup milk
  • 1/4 cup butter, melted
  • 1 cup onion, chopped
  • 1 clove garlic, smashed
  • 4 ounces mozzarella cheese, shredded
  • 4 ounces Monterey jack cheese
  • Topping:
  • 2 ounces Parmesan cheese, grated

How to Make

  • Step 1: Preheat oven to 375 degrees F.

  • Step 2: Pam spray a 9x13 casserole dish.

  • Step 3: Heat the spinach in microwave and drain liquid.

  • Step 4: Saute onions and garlic in butter.

  • Step 5: In a large bowl, mix flour, salt garlic powder and baking powder.

  • Step 6: Stir in eggs and milk .

  • Step 7: Add onion mixture .

  • Step 8: Mix in spinach and mozzarella and jack cheese.

  • Step 9: Transfer the mixture to the prepared baking dish.

  • Step 10: Sprinkle on Parmesan cheese on top

  • Step 11: Bake in the preheated oven 35 minutes, or until a toothpick inserted in the center comes out clean.

  • Step 12: Cool before serving.
