Step 1: Cook unpeeled potatoes in boiling water.
Step 2: Drain, and cut into cubes.
Step 3: Meanwhile cut bacon into squares and fry crisp in butter.
Step 4: Add potatoes fry until lightly browned
Step 5: Add vinegar to taste and parsley.
Step 6: Season with salt and pepper to taste and toss lightly until well mixed and hot.
