Ingredients

The ingredients are:
  • 7 ounces dry white rice, (1 cup)
  • 2 cups water
  • 1 tablespoon olive oil
  • 1 Roma tomato, diced
  • 1/4 cup green bell pepper diced
  • 1 serrano pepper, minced, (seeds removed)
  • 2 scallions, minced
  • 2 teaspoons chicken bouillon

How to Make

  • Step 1: In large covered sauce pan heat olive oil on medium high heat.

  • Step 2: Stir in rice and cook until slightly browned 5 minutes, stirring often.

  • Step 3: In the meantime, dissolve bouillon cube in water, heating in the microwave speeds up the process.

  • Step 4: Add the warm stock to rice and cook with cover on until rice has absorbed about 1/2 of the water 10 minutes.

  • Step 5: Add all the remaining ingredients and stir into rice.

  • Step 6: Continue cooking with cover on until rice is done and water absorbed, 10 minutes.

  • Step 7: Let rest covered 10 minutes off heat.
