Step 1: Heat 2 tablespoons oil on medium heat in a large covered pan.
Step 2: Add the onion and poblano.
Step 3: Stir well and cook for 2 minutes.
Step 4: Add rice and lightly toast.
Step 5: Add garlic, broth, cumin, salt and pepper to taste (they use more salt than we do )
Step 6: Bring to a boil, cover and reduce heat.
Step 7: Cook for 15 minutes and fold in the thawed frozen vegetables.
Step 8: Cover and cook for just another 5 minutes or until all the liquid is absorbed.
Step 9: Add the black beans in and fluff with a fork.
Step 10: Cover and let stand for 10 minutes.
Step 11: Check for seasoning.
