Ingredients

The ingredients are:
  • 2 tablespoons olive oil
  • 7 ounces dry white rice, (1 cup)
  • 1 cup white onion, diced
  • 3 cloves garlic, smashed
  • 1 cup poblano pepper, diced
  • 2 cups chicken broth
  • 1/4 teaspoons cumin
  • 2 teaspoons salt, to taste
  • 1 teaspoon pepper, to taste
  • 1 cup mixed frozen vegetables, thawed
  • 1 can (15 ounces ) black beans , drained

How to Make

  • Step 1: Heat 2 tablespoons oil on medium heat in a large covered pan.

  • Step 2: Add the onion and poblano.

  • Step 3: Stir well and cook for 2 minutes.

  • Step 4: Add rice and lightly toast.

  • Step 5: Add garlic, broth, cumin, salt and pepper to taste (they use more salt than we do )

  • Step 6: Bring to a boil, cover and reduce heat.

  • Step 7: Cook for 15 minutes and fold in the thawed frozen vegetables.

  • Step 8: Cover and cook for just another 5 minutes or until all the liquid is absorbed.

  • Step 9: Add the black beans in and fluff with a fork.

  • Step 10: Cover and let stand for 10 minutes.

  • Step 11: Check for seasoning.
