  • 1 pound ground beef
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 cup yellow onion, chopped
  • 2 tablespoons tomato paste
  • 2 cloves garlic, minced
  • 2 tablespoons chili powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon cayenne pepper
  • 1 can (7 ounces)tomato sauce
  • 1 can(15 ounces)kidney beans
  • 1 can(15 ounces)black beans
  • 1 can (15 ounces)corn
  • 1 can (15 ounces) whole tomatoes
  • 2 cups beef broth
  • 1 tablespoon fresh cilantro, minced

How to Make

  • Step 1: Heat oil in stock pot.

  • Step 2: Add beef and onions.

  • Step 3: Season to taste.

  • Step 4: Saute until onions are translucent.

  • Step 5: Add the corn and tomato paste.

  • Step 6: Saute briefly.

  • Step 7: Add chili powder, ground cumin, and cayenne pepper.

  • Step 8: Add the garlic, beans, tomatoes, tomato sauce and beef broth.

  • Step 9: Stir to combine and bring mixture to a boil.

  • Step 10: Simmer until the chili reduces by half

  • Step 11: For 30 minutes.

  • Step 12: Season to taste with salt and pepper.

  • Step 13: Add cilantro unless you are my son Jim then use parsley.

  • Step 14: Mix.
