Step 1: Cook the potatoes in salted boiling water 20 minutes.
Step 2: Drain saving 1/2 cup water.
Step 3: Add butter and seasoning to taste.
Step 4: Mash, adding milk, cheese and parsley.
Step 5: Add more cheese if needed.
Step 6: Add some potato water if to thick for you; just add enough to make creamy if needed.
Step 7: Check for seasoning.
