  • 3 pounds potatoes, peeled, diced
  • 6 cups water, boiling
  • 1 teaspoon salt
  • Mash
  • 4 tablespoons butter
  • 1/4 cup milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon white pepper
  • 4 ounces cheddar cheese, sharp, shredded
  • 2 tablespoons fresh parsley, minced

How to Make

  • Step 1: Cook the potatoes in salted boiling water 20 minutes.

  • Step 2: Drain saving 1/2 cup water.

  • Step 3: Add butter and seasoning to taste.

  • Step 4: Mash, adding milk, cheese and parsley.

  • Step 5: Add more cheese if needed.

  • Step 6: Add some potato water if to thick for you; just add enough to make creamy if needed.

  • Step 7: Check for seasoning.
