Step 1: Preheat oven 375°F
Step 2: Heat a medium sized pan on medium high heat, then drizzle pan with olive oil.
Step 3: Add chicken pieces and season with salts and pepper to taste.
Step 4: Sauté chicken until pieces are just cooked through and browned on all sides, about 5 minutes.
Step 5: Add broccoli and just heat; set aside.
Step 6: In a small bowl, mix breadcrumbs with parmesan cheese; set aside.
Step 7: Empty cans of soup into 9x13 casserole and mix.
Step 8: Tip chicken and broccoli and mushrooms into dish and toss to coat with soup.
Step 9: Sprinkle evenly with mozzarella and cheddar mix, then with breadcrumb and parmesan mix.
Step 10: Bake for 30 minutes until breadcrumbs are golden and dish is bubbling around the edges.
