Step 1: First, in a small metal bowl, put the egg white in and whip it till soft peaks form.
Step 2: In a larger bowl, add flour, sugar and baking powder and whisk or run through a sifter.
Step 3: In a 2-cup measuring cup, add 3/4 cup of milk, egg yolk, vanilla and oil. Stir with a fork.
Step 4: Slowly add to the flour mixture and add the extra 1/4 cup of milk a little at a time, if needed, so it's not too thick.
Step 5: Fold in the whipped egg whites just till incorporated.
Step 6: Heat a large skillet or flat-top grill on medium heat. Spray with non-stick cooking spray.
Step 7: Pour 1/3 cup of the pancake batter in center of the skillet, and let sit till bubbles form on the top. Check the bottom of the pancake to make sure it's not too dark. Then turn and cook another minute or so.
Step 8: Keep them warm in the oven while finishing the batch.
Step 9: Enjoy.
Step 10: *You can also use lemon extract or whatever you like.
