Ingredients

The ingredients are:
  • 1 (8-ounce) package diced dates
  • 1 (4-ounce) container green candied cherries (no mint flavor)
  • 2 (4-ounce) containers red candied cherries
  • 1 1/2 cups walnuts--coarsely chopped
  • 1 cup raisins
  • 1 cup flaked coconut
  • 2 tablespoons grated orange rind
  • 1 cup white flour
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/4 teaspoon cloves
  • 2 1/2 cups finely rolled graham cracker crumbs
  • 1 1/4 cups butter
  • 1 1/2 cups light brown sugar--lightly packed
  • 6 eggs--separated
  • 1/2 cup orange juice

How to Make

  • Step 1: In a very large bowl combine the first 7 ingredients with 1/2 cup of the flour.

  • Step 2: In another bowl mix the remaining flour with the next four ingredients; then mix in the graham cracker crumbs.

  • Step 3: In a large mixing bowl beat butter and sugar till creamy; gradually add the egg yolks and beat till thick and fluffy.

  • Step 4: Add the graham crumb mixture and blend well; stir into fruit mixture with orange juice.

  • Step 5: In a separate bowl beat the egg whites till stiff but not dry; fold into the cake mixture.

  • Step 6: Turn into well-greased 10" tube pan and bake in a 325 degree oven for 1 1/4-1 1/2 hours.

  • Step 7: Cool in pan for 30 minutes and take out and put on rack to finish cooling.
