Ingredients

The ingredients are:
  • 2 cups granulated sugar (white)
  • 1 1/2 cups oil (vegetable oil)
  • 4 large eggs
  • 3 cups all-purpose flour (white)
  • 2 teaspoons ground cinnamon
  • 1 teaspoon salt
  • 2 teaspoons baking soda
  • 2 teaspoons baking powder
  • 3 cups grated carrots
  • 1 1/2 cups chopped walnuts
  • OPTIONAL
  • 1 cup raisins
  • 1 cup red candied cherries
  • 1 cup diced dates
  • FROSTING
  • 1 pound confectioners sugar
  • 1 1/2 sticks butter (softened)
  • Milk (couple tablespoons to the consistency you like)
  • 1 teaspoon vanilla extract

How to Make

  • Step 1: Combine sugar, oil, and eggs (one at a time mixing well).

  • Step 2: Add flour, cinnamon, salt, baking soda, and baking powder; mix well.

  • Step 3: Add grated carrots, nuts, and any of the other optional ingredients that you choose; mix well.

  • Step 4: Put into a greased 10" tube pan and bake at 350 degrees for about 1 1/4-1 1/2 hours or until a pick comes out clean.

  • Step 5: When cool, frost or put a dollop on each slice as you eat it (that is the way we like it).
