Ingredients

The ingredients are:
  • 375 grams mixed dried fruit, (13 oz) e.g currants sultanas, raisins
  • 50 milliliters whiskey (2 fl oz)
  • 250 milliliters irish tea, any cold tea (9 fl oz)
  • Butter, for greasing, plus extra to serve
  • 225 grams plain flour, (8 oz)
  • 2 teaspoons baking powder
  • 125 grams soft light brown sugar, (4½ oz)
  • 1/4 teaspoon mixed spice
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon tsp ground nutmeg
  • 1 egg, (large)

How to Make

  • Step 1: Place all the mixed dried fruit in a bowl and pour over the whiskey and cold tea & allow it all to soak up the liquid overnight.

  • Step 2: Preheat the oven to 170°C (325°F), Gas Mark 3. Grease and line a 900 gram (2lb) loaf tin.

  • Step 3: Combine the flour, baking powder, sugar and all the spices in a mixing bowl; then make a well and break in the egg, then using a wooden spoon mix it into the dry ingredients. Adding a little bit of the liquid from the mixed fruit and mix it through. (You are looking for a wet dough, so you will NOT need to not use all the liquid.)

  • Step 4: Stir in the mixed fruit you are using and stir until everything is thoroughly combined. Spoon the wet dough into your lined loaf tin, & place tin on the middle shelf in the oven; bake for 1 hour.

  • Step 5: Remove cake from the oven and allow to cool slightly before removing from the loaf tin and placing on a wire rack. When cool, cover in cling film and foil and allow to sit for 1–2 days before cutting into it.

  • Step 6: Serve Barmbrack in slices, spread with a little whipped butter and enjoy.
