Ingredients

The ingredients are:
  • 1 avocado,mashed
  • 1/4 ounce smoked salmon
  • 2 ounces sourdough,toasted,( 2 slices)
  • 2 eggs
  • 1 tablespoon butter
  • 1/16 teaspoon chives, minced
  • 1/16 teaspoon pepper , to taste
  • 1/4 teaspoon salt
  • 1 lemon slice

How to Make

  • Step 1: If scrambled

  • Step 2: Whisk your eggs with herbs/seasoning – for extra creamy eggs, stir in a few tablespoons of milk or even creme fraiche.

  • Step 3: Melt Irish butter in a pan, adding in the egg mixture. Stir routinely and cook until soft.

  • Step 4: Keep warm.

  • Step 5: If poaching

  • Step 6: Poach until soft boiled

  • Step 7: Toast

  • Step 8: Toast sourdough

  • Step 9: Spread the mashed avocado onto the bread.

  • Step 10: Add the scrambled eggs, or poached eggs then top with the smoked Irish salmon.

  • Step 11: Season with salt/pepper to taste.

  • Step 12: Use a lemon slice to squeeze lemon juice over the top

  • Step 13: Sprinkle chives over the top
