Step 1: If scrambled
Step 2: Whisk your eggs with herbs/seasoning – for extra creamy eggs, stir in a few tablespoons of milk or even creme fraiche.
Step 3: Melt Irish butter in a pan, adding in the egg mixture. Stir routinely and cook until soft.
Step 4: Keep warm.
Step 5: If poaching
Step 6: Poach until soft boiled
Step 7: Toast
Step 8: Toast sourdough
Step 9: Spread the mashed avocado onto the bread.
Step 10: Add the scrambled eggs, or poached eggs then top with the smoked Irish salmon.
Step 11: Season with salt/pepper to taste.
Step 12: Use a lemon slice to squeeze lemon juice over the top
Step 13: Sprinkle chives over the top
