Step 2: Add the cream cheese and mascarpone cheese to the bowl, stirring with a whisk until smooth. Stir in the lemon rind and the next 4 ingredients (through nutmeg).
Step 3: Heat a saucepan over medium high heat. Add the pasta and cream cheese to the pan; cook 1 minute, stirring constantly. Stir in the spinach and tomatoes; cook 2 minutes or until the spinach wilts, stirring frequently.
Step 4: Remove the pan from the heat. Sprinkle evenly with cheeses. Serve immediately.
