  • 9 ounce package fresh linguine
  • 3 tablespoons cream cheese
  • 1 1/2 tablespoons mascarpone cheese
  • 1/2 teaspoon grated lemon rind
  • 2 teaspoons lemon juice
  • 1/2 teaspoon salt
  • 1/8 teaspoon freshly ground black pepper
  • 1/8 teaspoon ground nutmeg
  • 4 cups baby spinach leaves
  • 1 pint cherry tomatoes, sliced in half
  • 1/4 cup sliced fresh basil
  • 2 tablespoon grated Parmigiano-Reggiano cheese

How to Make

  • Step 1: Cook the pasta according to the package directions, omitting salt and fat. Drain the pasta into a colander placed over a bowl reserving 1 cup of the cooking liquid.

  • Step 2: Add the cream cheese and mascarpone cheese to the bowl, stirring with a whisk until smooth. Stir in the lemon rind and the next 4 ingredients (through nutmeg).

  • Step 3: Heat a saucepan over medium high heat. Add the pasta and cream cheese to the pan; cook 1 minute, stirring constantly. Stir in the spinach and tomatoes; cook 2 minutes or until the spinach wilts, stirring frequently.

  • Step 4: Remove the pan from the heat. Sprinkle evenly with cheeses. Serve immediately.
