Ingredients

The ingredients are:
  • 5 pounds russet potatoes (peeled, washed & cut into large, even chunks)
  • 2 large crushed garlic cloves (use more or less as desired)
  • 3 tablespoons cream cheese
  • 1/2 cup butter, cubed
  • 8 ounces sour cream
  • 1/2-2/3 cup half-n-half (can use whole milk)
  • .75 ounces chives, finely chopped
  • 2 teaspoons salt
  • Black pepper, to taste
  • 2 tablespoons butter, cubed (for serving, optional)

How to Make

  • Step 1: Place potatoes and crushed garlic into a pot, then cover with cold water. Bring the potatoes to a boil, reduce heat, cover and cook for about 25 minutes or until potatoes are just fork tender.

  • Step 2: Strain the potatoes and the garlic into a colander, then dump into a large mixing bowl.

  • Step 3: Add the cream cheese, cubed butter, sour cream, half-n-half and salt to the bowl.

  • Step 4: Using a hand mixer, beat on low speed for 1 minute, then increase to medium speed, beating until potatoes are smooth.

  • Step 5: Stir in the chives.

  • Step 6: Taste! Adjust seasoning by adding additional salt and black pepper, to taste.

  • Step 7: Transfer mashed potatoes into a serving bowl. If using the serving butter, make a shallow well and place the 2 Tablespoons of butter into the well to melt.
