Step 1: Place potatoes and crushed garlic into a pot, then cover with cold water. Bring the potatoes to a boil, reduce heat, cover and cook for about 25 minutes or until potatoes are just fork tender.
Step 2: Strain the potatoes and the garlic into a colander, then dump into a large mixing bowl.
Step 3: Add the cream cheese, cubed butter, sour cream, half-n-half and salt to the bowl.
Step 4: Using a hand mixer, beat on low speed for 1 minute, then increase to medium speed, beating until potatoes are smooth.
Step 5: Stir in the chives.
Step 6: Taste! Adjust seasoning by adding additional salt and black pepper, to taste.
Step 7: Transfer mashed potatoes into a serving bowl. If using the serving butter, make a shallow well and place the 2 Tablespoons of butter into the well to melt.
