Ingredients

The ingredients are:
  • Dressing:
  • 1/4 cup olive oil
  • 3 tablespoons balsamic vinegar
  • 1 tablespoon red wine vinegar
  • 1 teaspoon dijon mustard
  • 1 teaspoon honey
  • 1/2 teaspoon salt
  • Salmon:
  • 8 ounces salmon fillet with skin on the bottom
  • 1/4 teaspoon salt
  • 1/8 teaspoon freshly cracked black pepper
  • 1 teaspoon oil
  • Glaze:
  • 1/3 cup balsamic vinegar
  • 4 teaspoon brown sugar
  • Salad:
  • 1 avocado, chopped
  • 16 ounces spring salad
  • 8 ounces baby spinach
  • 1/4 cup walnuts, chopped
  • 1 cup strawberries,sliced

How to Make

  • Step 1: Mix dressing

  • Step 2: Salmon

  • Step 3: Preheat the oven to 425.

  • Step 4: Cover a rimmed baking sheet with aluminum foil and grease it.

  • Step 5: Rub the salmon skin with some oil and place it skin down on the prepared baking sheet.

  • Step 6: Season it with some salt and a bit of pepper.

  • Step 7: Start making glaze as you are preheating the oven. Heat up a sauce pot over medium heat.

  • Step 8: Add balsamic vinegar to the sauce pot and stir in brown sugar.

  • Step 9: Simmer, stirring often, until it's cooked down to half the amount.

  • Step 10: Take off heat.

  • Step 11: Brush salmon with balsamic glaze on the top and sides.

  • Step 12: Bake salmon for 13-16 minutes, depending on the thickness of your salmon fillet.

  • Step 13: Take salmon out and brush it generously with more balsamic glaze

  • Step 14: Arrange spring mix, spinach, sliced strawberries, walnuts avocado on a dish.

  • Step 15: Place salmon on top of the salad and drizzle a little dressing on the salad.
