Ingredients

The ingredients are:
  • 1 tablespoon olive oil
  • 1 cup yellow onion, chopped
  • 3 celery stalks, chopped
  • 1 tablespoon garlic, smashed
  • 1 tablespoon dried italian seasoning
  • ½ teaspoon crushed red pepper flakes
  • 3 cans (45 ounces)great northern beans,(15 ounces each)
  • 4 cups vegetable broth
  • ½ teaspoon salt
  • ½ teaspoon ground pepper
  • 1 bay leaf
  • ½ teaspoon lemon zest,grated
  • 1 tablespoon lemon juice
  • 4 ounces fresh baby spinach
  • 1 tablespoon fresh flat-leaf parsley, minced

How to Make

  • Step 1: Heat oil in a large pot over medium-high heat.

  • Step 2: Add onion and celery

  • Step 3: Cook, stirring often, until the onion is translucent, about 5 minutes.

  • Step 4: Add garlic, Italian seasoning and crushed red pepper

  • Step 5: Cook, stirring occasionally, until aromatic, about 2 minutes.

  • Step 6: Stir in beans, broth, salt, pepper seasoning to taste and bay leaf

  • Step 7: Bring to a boil over high heat.

  • Step 8: Reduce heat to medium-low and cook, stirring occasionally, until the vegetables are tender, about 20 minutes.

  • Step 9: Take out Bay leaf

  • Step 10: Add spinach and parsley last minute and cook until wilted

  • Step 11: Can use a stick blender to cream up a bit or just mash with potato masher a bit
