Step 1: Heat oil in a large pot over medium-high heat.
Step 2: Add onion and celery
Step 3: Cook, stirring often, until the onion is translucent, about 5 minutes.
Step 4: Add garlic, Italian seasoning and crushed red pepper
Step 5: Cook, stirring occasionally, until aromatic, about 2 minutes.
Step 6: Stir in beans, broth, salt, pepper seasoning to taste and bay leaf
Step 7: Bring to a boil over high heat.
Step 8: Reduce heat to medium-low and cook, stirring occasionally, until the vegetables are tender, about 20 minutes.
Step 9: Take out Bay leaf
Step 10: Add spinach and parsley last minute and cook until wilted
Step 11: Can use a stick blender to cream up a bit or just mash with potato masher a bit
