Step 1: Grill or pan-fry sausages according to package instructions. Slice them lengthwise and then into 1/2 inch moons.
Step 2: In a large dutch oven, heat oil over medium high heat and sauté onion, celery, peppers and garlic until tender. Turn down heat if needed. Make sure garlic doesn’t burn.
Step 3: Add sausage and remaining ingredients and bring to a boil. Reduce heat; cover and simmer 30-40 minutes.
