Ingredients

The ingredients are:
  • 1 1/2 pounds Italian sausage links (mild or hot)
  • 1 tablespoon olive oil
  • 1 cup chopped onion
  • 3 stalks celery, chopped
  • 1 red bell pepper, seeded and chopped
  • 1 yellow bell pepper, seeded and chopped
  • 1 green bell pepper, seeded and chopped
  • 1 tablespoon minced garlic
  • 3 cans (14.5 ounces each) Italian stewed tomatoes
  • 1 can (14.5 ounces) red kidney beans, rinsed and drained
  • 1 can (14.ounces) garbanzo beans, rinsed and drained
  • 1 can (6 ounces) tomato paste
  • 3/4 cup sliced black olives
  • 1/4 cup cream sherry (optional)
  • 1 tablespoon chopped fresh basil
  • 1 1/2 teaspoon unsweetened cocoa powder
  • Ground black pepper, to taste

How to Make

  • Step 1: Grill or pan-fry sausages according to package instructions. Slice them lengthwise and then into 1/2 inch moons.

  • Step 2: In a large dutch oven, heat oil over medium high heat and sauté onion, celery, peppers and garlic until tender. Turn down heat if needed. Make sure garlic doesn’t burn.

  • Step 3: Add sausage and remaining ingredients and bring to a boil. Reduce heat; cover and simmer 30-40 minutes.
