Ingredients

The ingredients are:
  • 3 tablespoons olive oil
  • 1 cup onions, chopped
  • 2 cloves garlic, smashed
  • 1 carrot, chopped
  • 1 stalk celery, minced
  • 1 can (28 ounces) tomatoes, diced
  • 1 pound potatoes, peeled, diced
  • 6 cups water
  • 1/2 teaspoon salt
  • 1/2 teaspoon dry oregano
  • 1/4 teaspoon pepper
  • 1 bay leaf
  • 1/4 cup parsley, chopped
  • 1 head escarole, chopped bite sized
  • 4 ounces dry ditalini pasta
  • 6 ounces frozen green beans
  • 1 can (15 ounces) cannelloni beans
  • Topping:
  • 4 ounces parmesan cheese, grated

How to Make

  • Step 1: Saute onions and olive oil together

  • Step 2: Add garlic

  • Step 3: Add celery and carrots

  • Step 4: Cook until tender

  • Step 5: Add potatoes

  • Step 6: Stir

  • Step 7: Add seasoning

  • Step 8: Add tomatoes

  • Step 9: Rinse out can with water

  • Step 10: Add rest of water

  • Step 11: Simmer one hour

  • Step 12: 2nd hour add Escarole and beans undrained

  • Step 13: Simmer

  • Step 14: Adding water if needed

  • Step 15: Check seasoning

  • Step 16: Last 30 minutes add green beans and pasta simmer until pasta is ready,it should be thick

  • Step 17: Take out Bay leaf

  • Step 18: Again check seasoning
