Step 1: Saute onions and carrots in oil in stock pot
Step 2: Add tomato paste, rinse out can with water and add to pot
Step 3: Add water and bay leaf
Step 4: Season to taste (they didn't have salt in recipe you do you)
Step 5: Add ham hock
Step 6: Simmer for 1 hour
Step 7: Add beans undrained simmer 30 more minutes
Step 8: Take out Bay leaf and debone hock
Step 9: Chop meat add back to pot
Step 10: Season to taste
Step 11: Last 5 minutes add sour cream don't boil
