Ingredients

The ingredients are:
  • 6 cucumbers, peeled, deseeded, and diced
  • 1 large white onion, chopped
  • 1-2 garlic cloves, chopped
  • 3 tablespoons extra virgin olive oil
  • 3 tablespoons white wine vinegar
  • 1 tablespoon granulated sugar
  • Salt and pepper, to taste

How to Make

  • Step 1: Bring a little water in a saucepan to a boil, add the cucumbers and cook for a few minutes, until translucent. Drain and arrange in a bowl, adding salt to taste.

  • Step 2: In a saucepan or skillet, saute the onion and garlic in the olive oil over low heat for about 5 minutes, or until barely golden.

  • Step 3: Add the vinegar, sugar and a little salt and pepper to taste. Saute for a couple of minutes more; then pour over the cucumbers.

  • Step 4: Leave it to rest for a couple of hours before serving at room temperature.
