Step 1: Get out a slow cooker that is at least 4 quarts in size.
Step 2: In a small bowl, combine the melted coconut oil, honey, lemon juice, and the ground cinnamon. Place them into the slow cooker.
Step 3: Add the banana slices to the slow cooker and gently stir everything together to combine it.
Step 4: Put the lid on and cook on low for 1 1/2 to 2 hours.
Step 5: Add the rum extract and stir everything to combine.
