  • ½ cup vegetable oil
  • ¼ cup unsalted butter, softened
  • 1 ½ cups granulated sugar
  • 4 eggs, room temperature
  • 1 tablespoon vanilla extract
  • 2 ¾ cups cake flour
  • 2 teaspoons baking powder
  • ¾ teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup buttermilk, room temperature

How to Make

  • Step 1: Preheat the oven to 350°Line muffin pans with paper liners.

  • Step 2: In a large bowl, beat the oil, butter, and sugar together on medium-high speed until light and fluffy, about 5 minutes.

  • Step 3: Add the eggs, one at a time, mixing for 20 seconds after each addition. Beat in the vanilla.

  • Step 4: Combine the flour, baking powder, baking soda, and salt in a medium bowl. Stir with a whisk and add half to the butter mixture. Beat on low speed until the flour is almost fully incorporated. Add the buttermilk followed by the remaining flour mixture and beat on low until just combined. Take care not to over mix.

  • Step 5: Fill each muffin cup ¾ of the way full.

  • Step 6: Bake for 12-15 minutes or until a toothpick inserted into the center comes out with few moist crumbs attached. Take care to not over-bake.

  • Step 7: Cool for 10 minutes. Transfer to a wire rack and cool completely before frosting.
