  • 1 cup superfine sugar
  • 1 large egg white

How to Make

  • Step 1: Choose perfect mint leaves. Wash and dry the leaves. They must be PERFECTLY dry.

  • Step 2: Whisk egg whites until frothy. Place sugar in a wide bowl. Place a rack on a baking sheet.

  • Step 3: Using tweezers, pick up a single mint leaf. With a fine, soft paintbrush, coat it entirely with the beaten egg white. It should be a thin, even coat - and should cover the leaf completely so that the sugar will stick. Still holding with the tweezers, hold the leaf over the sugar bowl. Using a teaspoon, sprinkle sugar evenly over the leaf. Shake gently and use more sugar to cover any bare spots. Place the leaf on the cooling rack to dry. Repeat with remaining leaves.

  • Step 4: Put the tray in a warm oven to dry, leaving the oven door half open. You can also leave them on the counter for at least 8 hours until completely dry.

  • Step 5: When the leaves are completely dry and glistening, store in an airtight container between sheets of wax paper.
