Ingredients

The ingredients are:
  • 1 cup panko bread crumbs
  • 1/2 cup Parmesan cheese
  • 1 teaspoon oregano, dried
  • 1 teaspoon basil, dried
  • 1 teaspoon thyme, dried
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon pepper
  • 1 egg, beaten
  • 1 tablespoon milk
  • 4 cups vegetables (suggestion: cauliflower florets, broccoli florets, mushrooms and/or carrot pieces)
  • 1/4 cup butter, melted
  • Ranch dressing, optional

How to Make

  • Step 1: Preheat oven to 400 degrees F.

  • Step 2: Line large baking sheet with parchment paper and set aside.

  • Step 3: In a plastic bag combine the first 7 ingredients (-pepper). In a small bowl or pie dish combine the egg and milk.

  • Step 4: Add 1 cup of vegetables to egg mixture; toss and transfer to the breadcrumbs bag and soak. Place on prepared pan. Repeat process for the remainder of the vegetables, egg mixture and breadcrumb mixture. After all the vegetables are on the baking sheet drizzle with the butter.

  • Step 5: Bake for 20-25 minutes or until vegetables are tender, stirring once.

  • Step 6: If desired serve with ranch dressing.
