Ingredients

The ingredients are:
  • 1 cup green or brown lentils
  • 1 1/2 teaspoons kosher salt
  • 1 tablespoon olive oil
  • 1 yellow onion, diced (about 1 1/2 -2 cups)
  • 1 green or red bell pepper, diced
  • 1 - 2 stalks celery, diced
  • 6 cloves garlic, minced
  • 4 ounces can chopped green chiles (1 can)
  • 8 ounces can tomato sauce (1 can)
  • 1/2 cup ketchup
  • 1 1/2 tablespoons Dijon mustard
  • 1/4 cup barbecue sauce
  • 2-4 tablespoon dark brown sugar (amount depends on level of sweetness, you prefer)
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon chili powder
  • 2 teaspoons apple cider vinegar
  • 1/2 teaspoon ground celery seed
  • 1/2 teaspoon freshly ground black pepper
  • 1/2 cup water
  • 4 tablespoons butter, at room temperature (unsalted)
  • 8 hamburger buns, potato buns preferred
  • Sliced avocado, for serving, optional
  • Sweet pickle chips, for serving, optional

How to Make

  • Step 1: Place the lentils in a medium saucepan and cover with water. Add 1 teaspoon salt. Bring to a boil. Reduce the heat to low and simmer until tender, about 30 - 35 minutes. Drain.

  • Step 2: Heat the olive oil in a large skillet over medium heat. Add the onion, celery and bell pepper and saute until the onions are translucent and the pepper is tender, 7 to 8 minutes. Add the garlic and green chiles and cook about 1-2 more minute(s). Stir in the next 11 ingredients; tomato sauce - 1/2 cup water. Mix well, then add the lentils. Distribute the sauce and lentils until all are evenly distributed. Taste for seasoning and adjust with salt to taste, IF needed. Reduce the heat to low; cover and simmer, stirring occasionally, about 15 or so minutes.

  • Step 3: Butter both sides of the hamburger buns. Toast on a hot cast-iron griddle or skillet until lightly browned, 2 to 3 minutes.

  • Step 4: Serve sloppy joes on toasted buns, topped with sliced avocado and pickles on the side, if using.
