Step 1: Pour the oil in a large, heavy bottom pot and bring to medium heat.
Step 2: Add the fresh roma tomatoes, sliced onion stems, grated carrot, salt, pepper and herbs and cook for 5 minutes.
Step 3: Add the meat and cook until browned, while breaking chunks apart so it is nicely minced.
Step 4: Add the can diced tomatoes and water and bring to a boil, reduce heat to medium low and simmer for 1 to 1 1/2 hours, stirring occasionally, until sauce has thickened and coats the minced meat nicely.
Step 5: Serve over gluten free pasta.
