Step 1: Wash the lentils with cold water.
Step 2: Put them in a pot with 4 cups of cold water.
Step 3: Bring to the boil and cook for 10 min.
Step 4: Add the orzo pasta to the pot and continue cooking for 10 minutes.
Step 5: Taste, the lentils shouldn’t be completely soft.
Step 6: Drain everything in a mesh strainer,
Step 7: Then wash with cold water to stop the cooking process.
Step 8: Put the lentils and orzo in a bowl.
Step 9: Finely dice the tomato, spring onion, pickles, parsley and dill.
Step 10: Add to the green lentil salad bowl and stir to combine.
Step 11: Add the olive oil lemon juice and vinegar, season to taste.
Step 12: Mix, taste and adjust accordingly.
Step 13: Adding more oil or vinegar as needed
Step 14: Cover and keep in the fridge overnight
