Step 1: Saute veggies and onion in butter or oil , salt and pepper, until soft, let cool.
Step 2: Mix all ingredients, except chips, to make meatball batter.
Step 3: Adjust the consistency of batter with more milk if needed, it should be soft and slightly sticky.
Step 4: Form large meatballs, 1.5-2 inch diameter, and roll in the crushed potato chips. Slightly press the chips in.
Step 5: Lay out meatballs in your air fryer basket.
Step 6: Set oven to 375°F and cook for about 13 minutes. Check temp, flip and continue about 7 more minutes. Chips should be dark brown (almost black in spots) when meatballs are done.
