The ingredients are:
  • 1/4 cup water
  • 2 pounds thin asparagus, tough bottoms removed
  • Salt and pepper, to taste
  • Dressing
  • 2 tablespoons extra-virgin olive oil
  • 1 tablespoon Dijon mustard
  • 2 tablespoons sherry vinegar
  • 1 large shallot, minced
  • Salt and pepper, to taste

How to Make

  • Step 1: Bring the water to a boil in a large, nonstick skillet over high heat. Carefully arrange the asparagus spears in the boiling water using tongs. Sprinkle with salt and pepper. Cover and cook for 5 - 7 minutes, until the water has absorbed and the asparagus is just tender.

  • Step 2: Remove from the heat. Into a small bowl, measure the olive oil, mustard, vinegar, and salt and pepper to taste. Whisk to blend well. Pour this over the warm asparagus. Toss gently bur thoroughly to coat evenly, using two spoons. Taste for seasonings. Sere warm.
