Step 1: In a large bowl whisk together the first 2 ingredients (-vinegar) plus 1/8 teaspoon pepper, 1/4 teaspoon salt and the cayenne. While whisking add the oil in a thin stream until it is incorporated.
Step 2: Stir in parsley and cucumber and toss.
Step 3: Add half of the walnuts and half of the pomegranate seeds and toss. Season with salt and pepper.
Step 4: Transfer to serving platter and top with the feta, remaining walnuts and remaining pomegranate seeds.
