Ingredients

The ingredients are:
  • 1 tablespoon pomegranate molasses
  • 1 tablespoon red wine vinegar
  • Salt
  • Pepper
  • Pinch cayenne pepper
  • 3 tablespoons olive oil
  • 3 cups parsley leaves (the flat leaf variety)
  • 1 English cucumber, seedless and unpeeled, halved lengthwise and sliced thin
  • 1 cup walnuts, toasted and chopped
  • 1/2 cup pomegranate seeds
  • 4 ounces feta cheese, sliced thin

How to Make

  • Step 1: In a large bowl whisk together the first 2 ingredients (-vinegar) plus 1/8 teaspoon pepper, 1/4 teaspoon salt and the cayenne. While whisking add the oil in a thin stream until it is incorporated.

  • Step 2: Stir in parsley and cucumber and toss.

  • Step 3: Add half of the walnuts and half of the pomegranate seeds and toss. Season with salt and pepper.

  • Step 4: Transfer to serving platter and top with the feta, remaining walnuts and remaining pomegranate seeds.
