Step 1: In a saucepan melt 3 tablespoons butter over medium heat.
Step 2: If you are adding in the fresh garlic and a pinch of cayenne pepper then saute in butter for about 2 minutes but do not brown the garlic.
Step 3: Whisk in the flour and 1/2 teaspoon seasoned salt or white salt until creamed together and smooth. Stir in light cream or milk a little at a time.
Step 4: Increase heat to medium and constantly whisk until the mixture becomes thick and smooth; remove from heat and set aside.
Step 5: Place 3 tablespoons of butter in saucepan over med heat; add the minced onion and cook until transparent (about 1-2 minutes).
Step 6: Add spinach and water to pan then lower the heat; cover stirring several times while cooking until the spinach is cooked.
Step 7: When the spinach is almost done mix in the prepared white sauce, sour cream and Parmesan cheese (if using) stirring well and simmer until completely blended.
Step 8: Season with more salt and black pepper if needed.
